I made my family homemade veggie burgers and spiralized potatoes for dinner while on vacation. They were delicious!! I ate the leftovers over a bed of lettuce the next day for lunch:) Even on vacation I try to eat healthy because it's what makes me feel my best. The burgers were only 2 ingredients plus spices: black beans and baked sweet potatoes mashed together then baked at 400 for 20 min. The only ingredients for the potatoes was potatoes plus spices!! I made lots of extras so I wouldn't have to make as much food throughout the week.

Started my day of fun with my friend Will at Lihn's Bistro for lunch. I started with the vegetarian spring rolls followed by the Vegetable Pho without tofu, extra veggies and rice noodles. SO YUMMY!!! I knew he would appreciate this place. If you are in Dayton it is a great place for tasty food.

A different kind of #transformationtuesday last nights dinner. Taco salad. Not as beautiful as something @aubreystrawb_rny makes but I bet it's just as tasty. When you make it, it tastes even better. Anyway I'm hovering around 310. I'm cool with that for now.
A cause for a celebration because today marks the day I lost my 1st 20 pounds.
I have to continue to stress how important it was for me to start from the inside first...my core feelings and emotional well being. After that I started to nurture my body and I am slowly making progress! Even at 259 lbs I loved myself, I am embraced my curves and I was confident! Now that the weight is coming off.....I have more energy and feel healthier! No pills, no lipo, just by making healthier food choices and working out ♡
