Tuesday // Breakfast
Currently still curled up in bed whilst enjoying this little vegan breakfast spread, cos I felt like treating myself to a little bit of what I fancy.
Crunchy oat granola clusters - thick and creamy plant-based quark - fresh blueberries - green grapes - toasted farmhouse loaf - crunchy peanut butter - blackcurrant preserve.
This peanut butter is killer and my absolute favourite from @meridianfoods, who were kind enough to send me a box of their delicious products. Thanks guys, from your number one nut butter fan.
Start the morning with a bowl of oats and fruits ! The oats make you feel saturated throughout the morning and these delicious strawberries . Which are An excellent source of vitamine c and mangese.
Accompanied with some green juice of celery and spinach to kick today in the *sshole ! 😎🙌 Ready for some lifting later on 😏

It's no wonder we aren't all enthusiastic about embarking on a healthy lifestyle when most health foods are so damn expensive!! I'm totally guilty of being sucked into buying a shit load of food especially when I hit London because it all looks exciting and new and I feel like an unstoppable health goddess just looking at it! 🙌🏻👑 😂 but let's be honest most of those gluten free, sugar free, dairy free, enjoyment free foods aren't always that healthy anyway and most we can make at home for a fraction of the price. Get savvy and shop smart. When it comes to fresh produce buy local and seasonal. For packaged whole foods and superfoods i.e. Rice, quinoa, nuts, seeds etc try local supermarkets or online instead of "health stores"because it's much cheaper and you can buy in bulk. For bread, cakes and desserts get creative and make your own! Make learning to cook/ bake and prepare meals a priority because not only will you Save money but you will be eating so much healthier without any added crap.
This lush chocolate smoothie and coconut chia pudding bowl was absolutely delish! I loaded it up with blueberries, chocolate truffle balls, walnuts, banana, chocolate chunks and chia seeds. Holy Jicama! That's enormous! I prepped sushi rice that had no rice in it! 😂 jicama and cauliflower with wonderful seasoning and then into the dehydrator, so I'm guessing this falls under #rawvegan prep. My first time seeing a jicama. Cool! #vegansofinstagram#prepcook#vegan

@veggi.jessi Hi! My name is Jessica and I began my vegan journey in September 2015. First, I would like to say (as I believe many would agree) that this is one of the best decisions I have ever made and I only wish I had known about veganism sooner.
I stumbled upon Gary Yourofsky’s „Best Speech Ever“ and a lightbulb went off in my head. I decided then and there that I could no longer consume meat. The night before I came across this speech, I had ordered a chicken Caesar wrap from a restaurant while out with friends, and I had no idea at the time that it would be my last time eating an animal. I couldn’t believe how disconnected I was until finally saw meat for exactly what it was – the remains of an animal who wanted to live.
Soon after, I discovered the amazing vegan community on Instagram and I learned about the documentary Earthlings. After viewing that life changing film, I went fully vegan.
I initially made the switch for the animals and for the ethical reasons. However, I discovered the amazing health benefits of living a vegan lifestyle, which was truly a bonus. I have never felt healthier, happier, stronger, cleaner and leaner! I have more energy than I ever used to have and I have since experienced years of sun damage start to disappear right in front of my eyes.
I no longer view animals as food and I feel so much more connected to all living beings; I’ve met some of the most amazing people along this journey and I know this movement is gaining momentum due to those helping others make the connection.
