Taco Wednesday!!!! Always a day late, ah well 🌮🌮 this was my first time using soy curls!!! They are amazing 🙌🌱😋 Justin came home, saw what I was cooking, and was so confused and intrigued. I just cooked them per the instructions and added BBQ sauce. I made @thugkitchen coleslaw, added fresh parsley, and lime juice.. bam!! Easy, quick, and delicious 👍💙🌱
I just ate a whole head of cauliflower for dinner and I have no regrets. 😎 I was tagged by the lovely @fruity_fitness_ to list the countries I've been to & 5 facts about myself so here goes: I have been to five countries; US, Mexico, the Bahamas, Belize, and Honduras... and no I'm nowhere near done 😁 fact 1.) I was a cheerleader my senior year and I was the worst cheerleader ever.. I essentially only joined to get in shape but it actually had a huge impact on my life. I had the best time ever even though I was always out of my comfort zone.. I'm not peppy and I'm usually never smiling, but I'm always genuinely happy 😄2.) I have always been obsessed with animals. When I was little I would bring home lizards, tad poles, and frogs. 🐸🦎 I was a bit of a Tom boy when I was little. 3.) JURASSIC PARK IS MY FAVORITE MOVIE OF ALL TIME. 4.) I'm really bad at math. I consider myself pretty smart but please do not ask me anything about math.. I have to count on my fingers still and it's embarrassing. 5.) if I could live anywhere in the world- I would live anywhere where the sun shines all the time and the fruit and produce are unlimited. I want to live by the sea and munch on watermelon ALL DAY. 🍉☀️🌊 I tag anyone who wants to participate!
Desperate for dessert, desperate for groceries. Making do with toasted Lebanese bread with @mayversfood peanut butter, cacao, coconut and rice malt syrup.... Kinda like a crunchy crepe. It didn't last long so confident it's a winner! Next time I will put some Nicecream with it!
I was reading the @newyorkermag this morning & saw a review of @bunnacafe, which reminded me how delicious this feast was. I've never met an Ethiopian dish I didn't like, but I especially love the lentils.
had quite a few people asking me about the stirfry that I posted a couple of posts back. I never have the same veggies on hand. Sometimes I'll use cauliflower, or broccoli and this time I had green string beans. Feel free to substitute in any way that you like. You could also use rice instead of noodles! This recipe makes about 6 servings.
Veggie and Tofu Stirfry
1 block (454g) of extra-firm tofu; diced
3 TBSP hoisin
2 TBSP light soy sauce
3 TBSP mirin
2 TBSP warm water
1 TBSP maple syrup
chili/hot sauce (optional)
pinch of salt
1 pack (227g) mushrooms; sliced
1 onion; diced
3 garlic cloves; minced
2 handfuls green string beans; cleaned and cut into 2 or 3
2 bell peppers; diced
oil for frying
green onion for garnish
salt and pepper if needed
1. In a bowl, mix the hoisin, soy sauce, mirin, water and maple syrup with a fork. Add the tofu and stir well. Set aside for 20 minutes; stir once in a while to ensure that the tofu is well-coated.
2. Heat oil in a pan over medium-high heat (leave the left over sauce in the bowl for later). Scoop out the tofu and fry it on the pan for about 5 minutes on each side, until a light brown/golden colour is reached and the tofu is crispy on the outside. Take out and place in a bowl. Set aside.
3. In the same pan,add onion and garlic and sauté until translucent. Stir in the bell peppers and green string beans. Cook for another five minutes and then add the mushrooms, sesame seeds and the remainder of the sauce that was left from the tofu.
4. Transfer the tofu to the pan and cover. Cook on low for about 5 or 10 minutes. Add extra water and soy sauce if needed. Remove from heat, and serve with your choice of noodles or rice, green spring onion and extra soy sauce (optional). Enjoy!

Just awful what control and prejudice can do. We are not so different to each other. A man started shouting at me and Jimmy the other day to take Mags & Tony (our furbabes) away because we had them next to us on the train! Why be so indifferent? They do nothing to harm you, they have every right to be here too, because we all share this planet. If you feel threatened by a dog off the lead then that says a lot more about YOU and your issues. And if you then think that this gives you the right to take their life, you are sorely mistaken. What was this person thinking when they shot down this innocent being?! Shocking. Sending love to the family who have had their baby murdered, I hope if anything this wakes people up to the amount of power that is being abused by the police everyday and how we can all strive to be better, and continue to end oppression, raise awareness and spread more love for ALL 💞 #Repost @collectivelyfree
Another sad case of #police#violence against a nonhuman #animal . Ziggy was out on a walk without a leash, and this was a reason for a police officer to feel "threatened" and to pull out his #gun and kill him...even though he didn't get anywhere near him. And then the police had the audacity to issue a ticket to Ziggy's parent...AFTER they had killed him.
In our capitalist society - the very same one the police protect - those without power (human and nonhuman) must be kept under control or else the system won't profit those with #power . So in the case of Ziggy, he was a strong dog and his being off leash gave him the *potential* of power. Sure, he could have attacked the officer. But his family knew him and trusted him. The officer however, accustomed to being the one with power, felt his power challenged...and opted for the gun rather than his voice.
