This #VEGAN POTATO SALAD RECIPE is the best potato salad recipe ever!! Once you try it, you won't be able to have it any other way. The creaminess from the vegan mayo, the tang from the mustard and the spicy smokiness from the paprika is the ultimate flavor combination to dress potatoes in! The itty-bitty chunks of onion, celery and radishes tie the recipe together with a mouthwatering, crisp crunch. This deliciousness comes together in just minutes and gets even better as leftovers! 🍽

2 lbs potatoes (yukon gold, honey gold or buttercream), thoroughly washed
1 cup vegan mayo ( I use @followyourheart 's brand)
1/4 cup yellow mustard
1/3 cup white onion, finely diced
1/3 cup radishes, finely diced
1/3 cup celery, finely diced
1 tsp apple cider vinegar
1/2 tsp smoked paprika
Salt and pepper to taste .
1. Cut the potatoes into bite sized pieces and place in a medium-large pot. Cover will water and bring to a boil. Cook potatoes until a fork goes through easily. Be sure not to overcook the potatoes!
2. Drain the water from potatoes and set them aside to cool.
3. While potatoes are cooling, dice your veggies. Place them in a large bowl and then add the vegan mayo, yellow mustard, vinegar, smoked paprika, salt and pepper. Mix together until fully combined.
4. Once potatoes are cool enough to handle, peel the skins off (this is very easy to do once they've been cooked!) and place the potatoes in the bowl with the creamy veggie mixture. Discard the potato skins.
5. Gently mix the potatoes so they're completely covered in the creamy veggie mixture. Salt and pepper to taste and enjoy!! .

i was checking my camera roll and realized i hadn't posted the recipe for the BROWNICKERS (brownie + snickers) brilliant name eh? lol 😛
this is one of my very very favs, so chocolat-eay, yummy and healthy at the same time 👌❤ hope you give it a shot! it's so worth it! SO WORTH IT 😍👅👅. 🍫[Brownickers]🍫
👉Servings: 12 servings (~165 kcal each)
-2 cups black beans cooked without salt
-1/2 cup + 2 tbsp unsweetened applesauce (boil some peeled ripe apples and blend them with cinnamon)
-1/4 cup agave or maple syrup
-2 tbsp flax meal
-1/2 cup cacao powder
-20 gr carob powder (or substitute with more cacao powder)
-1/4 cup oat flour
-1/4 tsp salt
-1 & 1/4 tsp baking powder
-1 tsp baking soda
-stevia to taste (I used 1 tsp)
-30 gr dark chocolate (I used Lindt 90%)
-1.5 tbsp + 1 tbsp peanut butter
-50 gr roasted peanuts
-3 tbsp brown/coconut sugar
-1.5 tbsp + 2-3 tbsp water
-45 gr dates 👉Instructions:
1.- Preheat oven to 180°C.
2.- Blend all the ingredients except dark chocolate, peanut butter, dates, peanuts, & coconut/brown sugar.
3.- Pour the batter into a previously greased baking tin and bake for 25 mins. Remove from oven and let cool.
4.- In a small nonstick pan/pot pour 3 tbsp brown/coconut sugar + 1.5 tbsp water. Don't mix it, just let it brown a little bit and when this color has been reached, add 1 tbsp peanut butter and roasted peanuts, and gently mix until all the peanuts are coated with the sugar & PB.
5.- Quickly pour the latter peanut mixture into the brownie and spread evenly. Take to the fridge for 1 hour.
6.- Blend 45 gr dates + 1.5 tbsp peanut butter and a tiny bit of water (approx 2-3 tbsp water). It should have a thick consistency, kind of peanut butter-ish consistency.
7.- Take the brownie out of the fridge, drizzle some of the previous mixture on the top (I used a plastic bag, cut the edge and used it as a piping bag). Afterwards, melt dark chocolate and drizzle it over the peanut butter/caramel mixture.
PS. I highly suggest putting it in the fridge for at least 3 hrs or even better leaving it overnight before eating it. This turns the brownickers consistency amazing. Please be patient😛 👇👇SPANISH/ ESPAÑOL👇👇👇👇
Really tired of hearing how non vegans argue that going vegan takes the flavor out of eating. I eat better tasting foods than most average eaters.
I hear all the time non vegans complimenting vegan food saying how it tastes so great (when made at home) and yet go back to eating the same basic way they have been their entire life. No thought of changing, no self reflection, not even a thought about the information you just gathered. What I'm trying to say is if you're not working towards a better, cruelty free food industry, you're part of the problem.
Hi everyone! I feel the need to keep my avocado toasts interesting. I just let the sweet & spicy cilli sauce fall where it may. To make this healthier, you could make your own organic chili sauce. I let @Heinz do the work for me, though I'm not adverse to making my own another time!
Dinner tonight 🤤 a chickpea avocado salad sandwich! Mashed chickpeas, half an avo, red onion, green onion, pepper and onion powder. Instead of vegan mayo To bind the chickpeas, avo is a healthy alternative! Added some hummus and lettuce as well. So good!! And there's extra so lunch tomorrow is all set 😄
