Tonight's episode of "I'm too damn tired to cook" is brought to you by last night's leftovers, and sponsored by today's exhausting but exhilarating surfing session. I had to remind myself several times to eat mindfully and chew -- not inhale -- my food (gotta be able to digest and absorb all the nutrients here!). Reinvented, quick (10 minutes), assembly-style meals can be delicious and creative, especially when adding lots of added flavor with simple standbys like olive oil, sea salt, freshly ground pepper, Meyer lemon, and herbs. Using high quality ingredients means food doesn't have to be fancy to be good, and good for us doesn't mean bland and boring. Yay!!
This party-for-one includes leftover quinoa, kale, garbanzo beans, with added chopped broccoli, tomato, red onion, pine nuts and topped with my organic meat loaf (grass fed beef, quinoa flakes, mirepoix, fresh herbs, tomato sauce, egg, spices, baked with a raw honey glaze) and drizzled with a tahini lemon olive oil dressing. Lots of protein in the beans, quinoa, and beef to help repair my tires body post-exercise. Quality carbs with lots of fiber for my gut health and everything low glycemic to keep my blood sugar balanced. Healthy fats in the EVOO, nuts, and tahini. Tons of nutrients, phytonutrients, anti-inflammatory, antioxidants...the works here, folks! Same story, different day 👍
