This afternoon's occupation! I asked my hubby to buy some zucchinies so I can re-stock the freezer and he bought like a whole farm's harvest (roughly!!!) so I've been peeling them off all morning and now I'm pre-sautéing them and then gonna stock them in the freezer and I'll be a much happier person 😊 there's just so much to do with the cleaning after I'm done!! Perfect #Breakfast for Dinner for this very lazy rainy Sunday 🍳💕 After a long week at the gym this was a well deserved treat for #CheatDay#Carbday 🙌🏼 Roasted some Garlic, Orange & Yellow Bell Peppers, Red Onions & peeled Yams in the oven @ 245° until they were starting to #Blacken . Since I had pizza for lunch yesterday and another version of pizza for lunch today, I opted for a more healthy dinner choice. Quinoa is always on hand, so I sautéed some veggies to go with the quinoa. This time, I used the red quinoa, which takes a little longer but has a nuttier flavor. For the veggies, I chose slivers of carrots and bell pepper seasoned with chopped garlic, onion, mushrooms, and sun-dried tomatoes. Oh, and I drizzled a little bit of balsamic on top just prior to digging in. Super yummy! ☆ I'm so grateful for my courage to try different combinations when I cook!
