Some of you have been asking me what I eat and what I had to cut out when I started my journey to get healthy and lose 42 pounds (see bottom of this post for food list). The answer is I didn't cut out anything. I was tired of depriving myself and saying "I can't have this, I can't have that." I actually needed to eat more! I learned how to fuel my body, eat better not less and still be able to indulge in my favorites. Seriously, ditch the diet. I know from years of personal experience, it sucks and it Does. Not. Work. 4 years and counting maintaining my results and I enjoy my food now more than I ever did before. I am pumped to work with you guys and watch your transformations as you experience what it's like to be satisfied, strong, full of energy, and confident this summer!! There are some days when I'm like REALLY resistant to cooking things. I just don't want to but I need to. You know when you open and close the fridge door just hoping something appears that may have missed the other 10 times you opened the door? Yeah that's where I am. I have figured out though if I just do one step towards the direction I need to go in (in this case cooking something for lunch) I'll usually follow through and finish it. So before I can talk myself out of it, I open a pack of ground meat and put in a pan without a plan. Now I have to finish. I know turkey meat will cook fast and it can turn in to 1 of 3 things right now: spaghetti, taco meat or stroganoff meat.
In all situations, it's hard getting started when you just don't want to! My brain was in the way. Eating well needs to require minimal brain power. This is why habits are the key. Habits create action even when your brain doesn't feel like it.
I ended up going with stroganoff meat (again😋) and throwing a bag of frozen broccoli in the microwave (seasoned with Butter infused olive oil @joliveco, salt and garlic powder). Now my belly is full and I feel accomplished in under 10 minutes. Sometimes you just have to get out of your own way.
Cauliflower Mac n Cheese with Crispy Kale
I'm obsessed with Mac n Cheese. I think I try a new recipe weekly as I'm forever on the hunt for the perfect version. This is my latest trial, my hubby's favourite so far. I'm still undecided as I've had a lot of good ones. If you want to help me on my quest for the holy grail of Mac n Cheese please comment your fave recipe below! 🤗
INGREDIENTS (for 4-6)
2 heads of cauliflower
1/2 pack of macaroni
3/4 cup soaked cashews
1/2 tsp English mustard
1 tbsp garlic granules
Salt and pepper to taste
1/2 cup panko breadcrumbs
1 1/2 cups almond milk
1 1/2 tbsp arrowroot
1 tbsp coconut oil
1/2 cup nutritional yeast
Start by chopping your cauliflower and washing your kale and placing on a baking tray with some olive oil. Put in oven on 180c for approx 30 mins. On low heat cook your coconut oil and garlic granules for approx 2 minutes then add in your arrowroot. Slowly add in almond milk while whisking for 5 mins until mixture gets thick. Add this to a food processor with your cashews, mustard, salt and pepper and nutritional yeast and blend well. Meanwhile have your macaroni cooking. When done add in your cauliflower, kale and sauce. If desired add bread crumbs and bake in oven on 180c for up to 20 minutes.
