Vegan choc mint milkshake. When I stopped consuming milk one of the only things I missed was spearmint milkshakes. This one is seriously better!! 1 cup coconut/almond milk, 1/2 frozen banana, 1/2 ice, 1/2 spinach, 1/4 drop of @doterraau peppermint oil. Blend and too with organic cacao nibs. Be careful with the peppermint oil!! That is some strong stuff 🌿
What a difference a year can make. I remember seeing the picture on the left after it was taken and thinking "oh dear". I was miserable and I clearly looked it too. It was time for change. So, I began my journey towards being better then I was. I started running and using the elliptical which was good for several months.
The biggest change took place on January 18th the day I walked into and joined Crossfit213 in DTLA. It was/is the hardest challenge I've ever put myself through. I was a scared man child going in but I kept coming back day after day. I listened, watched and learned from my coaches and peers. It hurt a lot but I kept wanting more and more. It has been shaping me into a better person inside and out. I've been working hard as hell for it and with each breakthrough I get faster, stronger, happier!

Meal 1: salad with hard boiled eggs and some taco meat
Meal 2: lunch at the beach (even though it was a chilly 60 degrees!) taco salad
Meal 3: kid-free dinner at a restaurant! 🙌 strawberry salad with grilled chicken, (no goat cheese 😭) asked to hold the dressing and they didn't, but they said no dairy in it, maybe not a compliant oil but did my best
Chorizo & Mushroom Omelette ||
- Protein / Fat - Low Carb - .
- Chorizo, sliced
- Mushrooms, sliced - Thyme, removed from stem
- 2x eggs, cracked & whisked
- Small amount of Parmesan cheese
- Heat heavy base frypan.
- Add chorizo to pan, stir.
- Once chorizo is slightly cooked add mushrooms & thyme, stir until mushrooms soften.
- Remove chorizo & mushroom from pan.
- Pour in whisked eggs, sprinkle with Parmesan cheese and season with pepper.
- Scatter egg mix with mushrooms & chorizo.
- Once egg is set, remove from pan and serve.
Most days of the year I average 300 grams of carbs. But I'd been busy and not eating enough so I started to not feel as great. Recently I've been pushing them to 500 grams most days. Some days I hit 600. Feeling way better. Sleep, mood, anxiety, recovery and energy are drastically improved. There are still some things I'm playing around with, adding and subtracting. Mushroom Beef and Broccoli 🍄🌳
What you need:
- 1 1/2 lb shaved beef
- 3 bunches of green onion
- Head of broccoli
- 8 oz Mushrooms of choice (I used bunapi)
- 2 cloves minced garlic
- 1 tsp salt
- 1 tbsp coconut aminos
- 1 tbsp sesame oil
- Saltless spice mix (I use one from Costco)
- Olive oil
Combine beef, salt, spices, garlic and coconut aminos, sesame oil and allow meat to marinade for at least one hour.
Boil broccoli for 3 min and drain, set aside. In a skillet pour 50/50 mix of olive oil and sesame oil and throw on mushrooms, sauté for about 5 min then add green onions (cut into small rounds). Sauté for another 3 min then add beef with all the juice. Cook on medium heat for about 5 min, until all meat is browned then add broccoli. Cover and simmer for 7 minutes. If you don't like all the extra juice you can cook it uncovered to reduce down the liquid.
Serve over rice or quinoa if you eat that kinda thing, enjoy!!! 🍲

You guys know that I hate cooking. Like I opp for super simple meals whenever I'm in charge.
The thing I hate most is cooking meat. My hubs is fabulous and me, well not so much.
I'm fine making the veggies but to save time and my own sanity we grabbed a rotisserie chicken from the store.
Mama's I know how you feel on those days where you don't know what to make, you're short on time, and your energy is low.
Instead of the drive through or pizza, which will end up costing you WAY more than you want, swing by the store.
Grab an already cooked chicken then go to the freezer section. You can snag the microwavable veggies packs that are already seasoned. And you're set.
And if all the kids are in tow, grab a little treat and tell them they only get it if they behave in the store and eat all their veggies. 😂😂 (that's what I did yesterday. Haha)
Homecooked, meals from scratch are awesome. But don't feel bad when that's not realistic. When you're running on fumes there are still plenty of quick, easy, and healthy options!!
