Some more tsumami at Tsukuta, Karatsu. Sadly, pictures of these items don't get across the really powerful flavors present. In my experience, there a variety of 'styles' with tsumami at a sushiya - in some instances, tsumami is a preview of the produce available for that day, slowly allowing the palate to open up to stronger flavors to come. But the opposite (showcasing the produce in unique and surprising ways to shock the palate to attention) is another approach. At this point in the meal, it became clear the Matsuo-san's tsumami are great drinking snacks and crisscross delicacies like chinmi, more rustic preparations, and a bunch of original ideas.
First picture is shiokara (fermented squid in entrails) that had been first made in January. The flavor was strong - one of my favorite snacks to have with sake, and the small grating of yuzu provided a surprisingly powerful counter balance to the strong salty flavor.
Second picture is sazae (a whelk sometimes referred to as 'turban-shell' for obvious reasons) from Kumamoto with gobo and tamago. This was mild and savory, a real interplay of textures that reminded me almost of slow-cooked scrambled eggs. Sazae seems to be a common ingredient in Kyushu, but this was the only instance in which I encountered it in a composed dish of this sort.

This is one of the servings of the day. One of my favourite sashimi will be Otoro😍. Apart from the delicious oily lines, the freshness also boost the magnificent tastiness of Otoro😚.

Another unique piece! Maguro and otoro tartare with caviar and gold flecks on top. Spread it on a buttered toast and it just melts in your mouth 😍
