Sushi Harutaka consistently ranks as one of the best sushi restaurants in Tokyo. Chef Harutaka Takahashi spent 13 years working for the world famous Jiro Ono before opening up his own place. Since I had amazing sushi experiences at Jiro Ginza, Jiro Roppongi Hills, and Masuda (Jiro's former apprentice), the expectation for Harutaka was extremely high.
As a disciple of Jiro, it is not surprising that Chef Harutaka's style of rice is known to be heavily seasoned with both vinegar and salt, however, his rice is definitely less acidic than others from the Jiro school of sushi. I had no problem with the texture of rice, but my rice was relatively cold (not warm) and quite dry throughout the night. It was quite disappointing and I hoped I just happened to be there on an "off" day. There might be some consistency issues as they just regained 1 star in the 2017 Michelin Guide after losing 2 stars on and off over the past few years.
