Marmalade Cake - like tea and toast in one lush, slightly bitter, cake.
I've tried to post this multiple times since I made it (my draft posts kept disappearing - @yesitsallvegan it is a vegan conspiracy!!) so now I've made it twice and yesterday made a jam version! Yum! Found some old jams and marmalades when The Boy did an epic shed tidy the week I was away.
Super simple: 225g marmalade or jam, 225g self raising flour, 150ml of strong black tea (doesn't need to be cooled), 65g brown sugar, 1 tsp mixed spice, 1 tbsp ground linseed mixed with 3 tbsp water and left to stand for at least 10 mins. Mix well, pour into lined tin. Bake for just over an hour at Gas 3, until skewer comes out clean in the centre of the cake. Cool. A bit. Devour!
