Sometimes kitchen experiments turn out spectacularly. 😍 These "Kung Pao" chicken thighs are going to be my lunch all week. Exciting! I wrote down the recipe but it needs a few tweaks...hold tight, my friends, I'll be testing it again this weekend!
Happy Monday. ✌🏾 So while at the festivities this weekend I got my hands on THE most delicious croutons I have ever had. @kellyscroutons you are amazing! They are completely vegan, and no palm oil. They are crispy and perfect and I can't wait to make tomato soup now. ☺️
'R' is for Red Dog. These steel dogs are located on the driveway of S.C. Pannell. They keep guard over the vineyard and add some quirky fun to visiting the cellar door on McLaren Vale, South Australia. .
Given we always have little time, I've recreated a cut down version of my cauliflower falafels from my recipe book in LMITK on page 49 into bites. A breeze to make with just 4 main ingredients and 3 spices. For faster results just have veggies pre steamed! 👇🏻👇🏻👇🏻 * Makes 12 bite sized pieces * Preheated oven 185C
INGREDIENTS - 1/4 small cauliflower head & I garlic clove pre steamed. (Allow approx 10 mins) - 1/2 cup of quinoa puffs - 1 tablespoon of nut butter( substitute with tahini if preferred) - 1/2 teaspoon cumin powder - 1/2 teaspoon salt - Pinch pepper
Place steamed veggies in food processor then add nut butter. Blend roughly and scoop out and into a separate bowl.
Add the remaining ingredients and stir by hand until mixed through.
Using a teaspoon make small mounds.
Place these on a lined baking paper oven tray and bake approx 15 mins or until they are golden brown. They are delicate, and soft within, so handle with care.
Serve with a small bowl of natural yoghurt and mint leaves.
For a vegan side use from my recipe in LMITK "Exotic Ginger & Apricot Jam" from page 107 adding salt and apple cider vinegar for the savoury version!
There's nothing more authentic than a Cha Chaan Teng meal when in Hong Kong! We had supper at the Australia Dairy Company (still don't know why it's called that) last night to cure our jet lag, and it worked! .
We had HK milk teas, macaroni noodles with Ham and Egg and a Ham and Egg sandwich 😍 Loved the super quick service (wham, bam, thank you ma'am) and wee were in and out if there within 30 minutes. Please be warned that this place has a reputation for unfriendly service and staff, but its all part and parcel of the experience 🤗
Halibut en papillote! Such a fast and easy way to make fish! I had a bunch of veggies lounging in the drawer I needed to use so I got some fresh Halibut and made a parchment paper pouch.I used zucchini, yellow squash and mini heirloom tomatoes but you can use whatever veg is hanging out in your fridge, too! You just cut a large heart shape into parchment paper, pile you veg and butter, season with salt and pepper, put the fish on top of that, season with salt and pepper, lay the dill and lemons and fold the pouch closed. Bake in a 400° oven for approx 27 minutes and you're golden! Doesn't it kinda look like a face? I didn't even do that on purpose! 😆
