I was craving something tropical after this beautiful sunny day!!! Soooo I made my Wild Salmon Cakes with a cold Kelp noodle salad and spicy baked plantains 🍌 It was perfect!!! I never had Kelp noodle in a cold salad before and I think I'm gonna be obsessed now for summer 😂. When I took this iconic absurdity of a picture in 1996 I was one year removed from sleeping on a used mattress I took from a garbage dumpster in the back of an hourly sex motel. Couldn't afford to buy a bed so we do what we gotta do to get by. You can imagine all the fun colorful bodily fluids I tried my best to clean off.
21 years later I'm taking the same photo backstage hosting #SaturdayNightLive for the fifth time. If you're going thru your own tough times "used mattress" stage, do your best to have faith things'll get better and always be willing to outwork your competition because you never know where life is gonna take you.

Mix Berries Smoothies
1 heaping cup (160 g) organic frozen mixed berries
1 (100 g) small ripe banana, sliced and frozen
2-3 Tbsp (30-45 ml) light coconut or almond milk, pl
1 Tbsp shredded unsweetened coconut
1 Tbsp chia seeds
1 Tbsp hemp seeds
1 Tbsp gojiberry
Add frozen berries and banana to a blender and blend on low until small bits remain - see photo.
Add a bit of coconut or almond milk and protein powder (optional), and blend on low again, scraping down sides as needed, until the mixture reaches a soft serve consistency.
Scoop into 1-2 serving bowls and top with desired toppings (optional). I prefer chia seeds, hemp seeds, and coconut, but strawberries, granola and a nut or seed butter would be great here, too!
Best when fresh, though leftovers keep in the freezer for 1-2 weeks. Let thaw before enjoying.
