Weekends are always the most difficult when it comes to staying on track with nutrition plans and keeping up with workouts but no matter how your day went yesterday or even this morning, change that mindset!
It's never too late to make positive changes. Don't get into the mindset of "Oh I already messed it up so I might as well continue." This will only lead you into a downward spiral that is difficult to come out of. Take the day to relax but treat yourself and your body by getting 30 min of exercise in - whether it's walking, cleaning the house, getting an at-home workout in, or heading to the gym. Doesn't matter - just do it!

Saturday Lunching 👌🏻 I actually split this into two meals to have at two points in the day rather than one but the food volume is immense 👍🏻 Garlic and Chilli Cod with a pesto, basil & spinach spelt pasta mixed with pesto served on a bed of rocket and tender-stem broccoli on the side 🙌🏼 Ingredients;
10oz Cod Fillet
200g wholegrain spelt fusilli pasta
100g baby leaf spinach
1 chopped red chilli
2 cloves garlic
Fry light butter spray
30g gluten free Pesto
100g shiitake mushrooms
1. Boil the pasta in a bowl with a pinch of salt.
2. Whilst cooking in a large separate pan using the fry light heat the garlic and Chilli until golden, then add in the shiitake mushrooms until cooked through.
3. Now place the cod on top and cover for 5 minutes or until the fish is cooked.
4. Add in the baby leaf spinach and again cover to wilt.
5. By this time the pasta should be ready, drain and add to the large pan with the basil and pesto.
6. Stir in and then serve on a bed of rocket 😋
