No biggie. 😋😍 1 egg (70cal) + 2 egg whites (34cal); scrambled up w 1 oz shaved deli ham (30cal), 1 tbsp shredded sharp cheddar cheese (27cal), 1 tbsp canned petit diced tomatoes (5cal), 1 tbsp canned corn (10cal), & a bit of fresh diced onion (negligible cal); a dash or two of curry powder, chili powder, salt & pepper (negligible cal); 'topped' w 1 tbsp salsa (5cal) + 1 tbsp plain Greek yogurt (8cal). God damn ridiculously fucking delicious.
Pasta is probably what I make the least of. It's not my very favorite, but something that just hits the spot once in a while. This is one of my favorite summer pasta dishes (and perfect for meatless Monday)! Sumer squash and canned diced tomatoes are all you need for veggies. (Though, add as many as you'd like!) Precook the squash, and toss it and a can of semi-drained diced tomatoes with your choice of pasta (whole wheat, gluten free, etc), olive oil, and seasonings to taste. I used basil, garlic powder, Italian seasoning and salt/pepper. Tonight I added some fresh parmesan cheese to the mix.
