THAI TANGY SOUP
I have worked with a recipe from healthy holistic living but made few changes. For original recipe look up their website.
2 tbsp coconut oil
2 small onions - diced in small pieces
1 can of organic diced tomatoes 796ml
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp himalayan salt
1 tsp turmeric
1 can of full fat coconut milk
1 medium cauliflower - cut into small pieces
2 packed cups of spinach
Next few ingredients are optional:
1 tbsp sundried tomatoes
Juice of 1 lemon
1 big pinch of tamarind
1 cup of water
4 iranian dates - pinched in pieces
2 tbsp raisins - soaked in 4 tbsp water for about 10 min. (To rehydrate them so they can release the flavour into soup faster)
0. Soak the raisins.
1. Melt oil with whole cumin and let it sizzle for about a minute on medium to low heat.
2. Add onion and stirfry till translucent.
3. Add diced tomatoes and all spices. Stir.
4. Now add the rest of ingredients, stir well, bring to boil, lower heat to low, cover with lid and simmer for about 20 min.
