TRUFFLED MASH with slow roasted lamb shank is probably one of the best winter warmers around and dead easy to cook in the oven or crock pot.
Simply grab a couple of lamb shacks, some finely chopped carrot, onion, celery or what you like, a can of chopped tomatoes, some salt and pepper and even a bay leaf or some olives and let it do its thing for up to 8 hours on low in the crock pot, or 3 or more hours on 150 degrees Celsius in the oven.
Once cooked, turn to low, boil some potatoes with skin, and drain once cooked. Chuck them into your Thermomix, or food processed or use a hand held whisk our good old fashioned masher, add some salt and pepper, some white or black truffle oil, and a bit of milk, cream or almond milk (depending on your dietary requirements) and mix to form a smooth consistency. Don't overwork.
Plate up with the truffled mash, take the meat of the bone, spoon some of the leftover sauce over the top and sprinkle with fresh chopped parsley.
