yield: ABOUT 5 CUPS GRANOLA prep time: 15 MINUTES cook time: 25-30 MINUTES total time: 45 MINUTES⠀
3 cups old fashioned oats or gluten-free oats⠀
1 cup chopped walnuts⠀
1/2 teaspoon sea salt⠀
1 1/2 teaspoons ground cinnamon⠀
1 large ripe banana, mashed (1/2 cup)⠀
1/4 cup melted coconut oil⠀
1/4 cup pure maple syrup⠀
2 tablespoons brown sugar⠀
1 teaspoon vanilla extract⠀
1/2 cup mini chocolate chips (optional)⠀
Preheat oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside.⠀
In a large bowl, combine oats, walnuts, salt, and cinnamon. Stir to combine.⠀
In a medium bowl, combined mashed banana, coconut oil, maple syrup, brown sugar, and vanilla extract. Pour liquid mixture over oat mixture and stir until oats are coated. Spread evenly on prepared baking sheet.⠀
Bake granola for 25-30 minutes, stirring occasionally. Remove from oven and cool granola completely on baking sheet. The granola will crisp up as it cools. When granola is completely cooled, stir in the chocolate chips, if using. Store in an airtight container or glass jar with a lid for up to two weeks.⠀
Note-for vegan recipe, make sure you use vegan chocolate chips.⠀

First time making meatballs from scratch and I gotta say, I'm pretty proud of myself 😎. I used @lexiscleankitchen 's 'Loaded Turkey Meatballs' recipe and they came out so perfectly 👌🏻 I had mine with zucchini noodles and diced cherry tomatoes, and my fam had meatball subs 😛. I don't do 'meatless monday' or 'meatless any day' because my body functions best with all the eggs, all the cheese, all the meat and all the fish 💪🏼✨ #meatmonday .

So this has been my Monday nights lately. I have the house to myself so after a long day at work, I get some and CLEAN. I finish meal prep for the week, do any extra laundry, deep clean the kitchen and bathrooms and any extra parts of the house that need it. I'm usually exhausted by 8pm so I have been eating frozen dinners while reading to wind down. Honestly, I don't love these things but it's one less plate to clean after a busy evening. 😝 One prepackaged meal isn't going to mess up my diet and exercise regimen so I don't sweat it!
When you Source your Lettuce from Organic - Non GMO Farms - it comes with 🐞🐞🐞. Unfortunately the little guy never made it. 😔 BUT this reassures me that where my food is coming from is the REAL DEAL. 🙏 It's not being sprayed so all the little 🐞🐛🐌can thrive. ❤
Overnight oats is becoming a new favorite of mine. Breakfast is important, but sometimes time isn't on my side. So I like to prep my breakfast the night before to make the morning go as smoothly as possible. For my overnight oats, I use 1/2 cup of old fashion oats (I'm sure quick oats would work as well), 1/2 cup of unsweetened original almond milk, blueberries, frozen mangoes and chia seeds.
