Dinner: I had chicken and mushrooms and Pinterest....
Chicken breast with whole mushrooms with minced garlic and onions and black rice cooked in chicken broth. I used truffle oil to sauté the garlic and truffle salt to season so it's a very mushroomy dish.

This is not to demonize white rice. I eat all grains and encourage you to expand your palate and boost your nutrient intake. I'd love to hear about the new grains you're trying out!

I picked up this black rice last week in the Asian supermarket and am now super happy to be trying it. 🙌🏼 Via Health.com 👩🏻⚕️According to ancient Chinese legend, black rice was so rare, tasty, and nutritious that only the emperors were allowed to eat it. And after hearing about all the amazing antioxidants I can see why! This ancient grain is fit for a 👑! Black rice has the highest amount of antioxidants of all the various types of rice 🍚 💥-even more so than brown. Black-rice bran contains the antioxidants known as anthocyanins, the purple 💜pigment found in blueberries, grapes 🍇 , and acai -- that have been linked to a decreased risk of heart disease and cancer, improvements in memory, and other health benefits. 👌🏼I am definitely going to be phasing out brown rice for this superfood grain.
For today's breakfast (I'll be back to my intermittent fasting tomorrow when I'm not working) I made a Black Rice Porridge 😊
Cook 1 cup of rice as per usual after soaking overnight. However in the final 20 minutes add 1/4 cup of coconut cream & 1 teaspoon of vanilla & in the final 10, a small handful of raisins...Once the rice has cooked, cool on stovetop for a few minutes -- then add
1 tablespoon of hemp protein
2 tablespoons of millled flaxseed
1/2 teaspoon of amla powder
1/2 teaspoon of pomegranate powder.
Stir & serve with coconut mylk (I used @kokodairyfree) & top with mixed berries like red & black currants, blackberries and blueberries..and I also indulged in topping with this raw millionaire bar by @rawesctacy....OH YUM! 😂...enjoy! 😊
